Gluten-Free Misconceptions

Carla Duenas, Registered Dietitian with Baptist Health South Florida, says most of the minerals that we get from whole grains are found in wheat containing products: "Pasta and breads, those are the ones that we think most commonly contain gluten and if we go gluten free, we can be missing some of the minerals we need". She explains gluten intolerance is when a particle of gluten can trigger a whole cascade of responses in the body, where it affects them negatively.
